1 cup raisins
1/2 cup dried cranberries (pref unsweetened)
1/2 cup rolled oats
1/2 cup brown rice puffs
1 teaspoon natural vanilla extract/essence
2 tablespoons cacao or cocoa
1. Place all the ingredients in your food processor or blender.
2. Pulse the mix at high speed a few times until the mix is starting to come together.
3. Continue to mix at medium-high speed until the mix is sticky and combined. It will have white flecks of the oats through it.
Depending on how powerful your food processor/blender is - it may take anywhere from 1 minute to 5 minutes for the mix
to come together - it will happen!
4. Roll into balls between the palms of your hands - about the size of large grape - or bigger if you prefer. You may not yield as many if you make them bigger.
Storage: The balls can be stored in the fridge to firm up, but are fine kept in an airtight container at room temperature for a week.
If for some reason the mix is too dry and a bit crumbly - though unlikely - try adding a tablespoon of water or coconut milk to the mix. Just make sure you have given the mix a really good chance to combine first! Enjoy!
Substitution: You can substitute the rice puffs for oats. You can also use 100% Raisins if you don't have cranberries in your pantry.
