  • Cranberries are not among the ‘dirty dozen’ foods that are at high risk of being contaminated with pesticides, so buying organic is optional.
  • Look for a dark maroon/red colour all over – except perhaps around the stalk.
  • Cranberries are easily damaged, so check carefully and avoid discoloured, dull fruit.
  • They keep well in a refrigerator, or may be frozen for up to 10 months if perfect and whole.

  • Do not serve raw – they are very tart.
  • Poach gently in a little water – the skins will come away, and you can then blend with a stick blender and push through a fine mesh sieve for the required texture.
  • Bake with other foods, or add some apple puree to lessen the tartness.

  • Mix cranberry puree with mashed, chopped or pureed apple, blueberries, mango, peach, melon or banana.
  • Include in cooked chicken or pork dishes.
  • Mix into plain yogurt.
