Kamut is a grain that is believed to have been used in ancient Egyptian times – over the years it has not been altered by any modern horticultural methods, so it retains all of its original characteristics and excellent nutritional values.

Kamut contains:

  • Up to 30% more protein than ordinary wheat.
  • About the same amounts of amino acids as ordinary wheat.
  • Higher levels of vitamin E, thiamine, riboflavin, phosphorus, magnesium, zinc, pantothenic acid, copper and complex carbohydrates than ordinary wheat.
  • Amounts of fatty acids that make it a high-energy food.

Introducing kamut to your baby…

  • Always speak with your baby’s doctor or paediatrician
    about introducing any grain – including kamut – into your baby’ diet.
  • Kamut is related to wheat, so you may be advised kamut2_puffed
    not to introduce it until your baby is 8 or 10 months old – and if there is a family history of wheat allergies you would probably be advised to delay until after he or s he reaches 12 months of age.
  • Interestingly, a team of independent experts (including from the International Food Allergy Association) came up with some remarkable results when they tested two different wheat-sensitive populations – finding that many of those with wheat allergies that ranged from mild to severe, were considerably less sensitive to kamut!

Buying and storing kamut…

  • Like any grain, kamut contains natural oils, so may become rancid if stored for long periods of time – particularly if not kept in a refrigerator.
  • Buy kamut in small quantities if possible, and use it as quickly as you can.
  • Whole grain kamut can be stored for several months in a cool dry place – but it is better to store it in a refrigerator if you live in a warm climate.
  • Check on the kamut frequently, especially if you don’t cook it often.
  • Ground kamut should be stored in an airtight container – preferably in your refrigerator.
  • Whenever possible, buying organic kamut is a good choice – but kamut is not among the foods that are often found to be contaminated with pesticide residue.

Kamut for your baby…kamut3

Kamut is a grain that is similar to bulgar wheat. It has a buttery, sweet flavour, cooks quickly, and is great for your baby as a warm cooked cereal or used in savoury dishes such as pilaf.

To cook as a cereal:

  • Use 1/4 cup of ground kamut to 1 or 2 cups of water – experiment to find what suits you and your baby – and stir or whisk constantly to avoid lumps.
  • Add chopped or pureed raisins, apples, dates.
  • After your baby reaches 2 years of age, try adding chopped or ground up nuts (nuts are not recommended for those under 2 years of age).
