Also, in terms of nutritional value, corn is considered secondary to most other vegetables – being mainly made up of carbohydrate ‘starch’ which provides calories without other goodness. A third reason is that kernels (niblets) of sweet corn are considered a potential choking hazard for a young baby. At 12 months, a baby is better able to chew – and having sweet corn kernels as a finger-food snack may even help with concentration and small motor skills!
Sweet corn is good for baby (and you):
The main nutritional value of sweet corn is as a high-energy food, as it is rich in carbohydrates and protein. Other nutrition is fairly minimal, but a developing infant does need energy foods – growing is hard work!
Hints on buying and storing:
- Look for corn in the husk, which should not appear too dried out.
- Check that the corn cob is firm, not ‘squashy’.
- Pull the husk back a little at the top, to peep at the corn cob – it should look shiny and fresh.
- At home, store in the refrigerator with the husk still on.
- Use within 2 or 3 days.
- Remove the husk and cook whole – by steaming, or in a pan of boiling water – then shave off the kernels using a sharp knife.
- Alternatively, shave off the kernels first (stand corn cob on one end, hold with a fork, and ‘saw’ carefully downwards), then steam or boil them.
Ideas for ways of including sweet corn in your baby’s meals:
- Puree, or leave kernels whole, and add to cooked apple.
- Combine with other vegetables – carrots, peas, courgettes (zucchini), green beans, white potato.
- Add to cooked lentils or brown rice.
- Include in chicken, pork or beef dishes.
