INGREDIENTS
2 medium sized potatoes
1 small onion
1/2 cup red kidney beans
1/2 cup tasty cheese
1/2 teaspoon of sweet paprika
1 garlic clove
1/2 cup crushed tomatoes
METHOD
1. Preheat the oven to 200 degrees C
2. Dice up finely the garlic clove and onion.
3. Prick the potatoes with a fork and microwave them for 5 minutes. (This speeds up the cooking time)
4. When the potatoes are cooked put them into the oven and bake for 20 minutes
5. In the meantime heat up a medium sized pot and add in a little vegetable oil.
6. Add in the onion and garlic and cook for 1 – 2 minutes.
7. Add in the sweet paprika and stir through for another minute.
8. Add in the red kidney beans and crushed tomatoes and cook for another 5 minutes until it has thickened.
9. Remove potatoes from the oven after 20 minutes. Cut them in half and scoop out the potato from the potato skins.
10. Add in the potato to the cooked bean mix. Then scoop the mix back into the potato skins.
11. Serve with grated cheese on top of each potato
