INGREDIENTS
1 tablespoon of olive oil
¼ cup of chopped onion
1 cup of lean minced (ground)beef
2 cups of chopped pumpkin
2 tomatoes, diced
1 cup of unsalted chicken or vegetable stock
METHOD
1. Using a different board and knife, peel and chop the vegetables.
2. Heat the oil in a medium-sized pot and fry the onion over medium heat for a few minutes, stirring occasionally with a non-metal spoon.
3. When onion is soft, add the beef and the chicken liver and cook, stirring occasionally, until the meat is light brown all over.
4. Add the pumpkin and tomato, pour in the stock, and mix to combine.
5. Bring to a boil, reduce the heat and simmer for 20 minutes.
6. Blend with a stick blender to a puree, or mash well with a fork for the desired texture.
