Brown Rice Pudding with Apple and Pear

INGREDIENTS
¼ cup of brown rice
½ cup of apple juice
1 heaped tablespoon of raisins
½ a small apple
½ a small pear

METHOD
1. Peel the apple and pear and remove the cores, then chop both fruit into small pieces.

2. Combine the rice, apple juice, raisins and chopped fruit in a small saucepan and bring to the boil over medium heat.

3. Reduce the heat to very low and cover the pan with a well-fitting lid.

4. Simmer very gently until the rice has absorbed all the juice and is soft – about 20 to 30 minutes – checking frequently and adding more juice (or water) to prevent drying out.
