INGREDIENTS
190 grams (6 ounces)of minced (ground) beef
1 teaspoon of olive oil
½ a medium onion, peeled and diced
5 tablespoons of tomato based pasta sauce (salt-reduced or salt-free)
1 medium zucchini, grated
1 cup of grated cheese
1 cup of previously cooked brown rice
1 clove of garlic, peeled and crushed
1 pinch each of dried parsley, basil and oregano

METHOD
1. In a medium-sized saucepan, gently heat the olive oil, add the onion and fry lightly, stirring with a non-metal spoon.

2. Crumble the beef into the onion, then add in the garlic, basil, parsley, and oregano.

3. Cook over medium heat, stirring until the beef is lightly browned and cooked through.

4. Stir in the pasta sauce and heat through – add more sauce if necessary to coat everything.

5. Add the zucchini, rice and cheese and heat gently until the cheese melts.

6. Use a stick blender to puree the mixture.
