INGREDIENTS
2 cups of water
1 small chicken breast – about 100 to 125 grams (3½ to 4 ounces) chopped into small pieces
¼ cup of uncooked rice
3 carrots, peeled and thinly sliced
125 grams (4 ounces) of green beans, roughly chopped

METHOD
1. Bring the water to the boil in a medium-sized saucepan over high heat.

2. Put in the chicken and rice then reduce heat to medium/low and simmer for 15 minutes.

3. Add the carrots and beans to the pan and continue to simmer for a further 10 minutes.

4. Turn off the heat and strain the cooking liquid into a cup then remove the chicken and chop it into pieces.

5. Return the chicken to the pan and use a stick blender to blend everything to a smooth consistency, adding some cooking liquid to get the desired texture – or puree it all in a food processor.
