INGREDIENTS
100 grams (3½ ounces) of fresh chicken breast or thigh meat – cubed
1/2 cup of uncooked couscous
1 cup of water
1 cup of canned corn kernels

METHOD
1. Put the couscous into a medium-sized bowl.

2. Pour the water into a small saucepan and bring it to the boil then pour it onto the couscous (or boil water from your kettle), stir well, and leave to stand covered with a plate or cling wrap for about 10 minutes, until the water has been absorbed.

3. Meanwhile, use the same saucepan to poach the chicken – put the cubed chicken into the pan, cover it with water, and bring to the boil over medium heat.

4. Turn heat to low and simmer gently for about 10 minutes, until the chicken is cooked through.

5. Chop the cooked chicken very small, or blend using a stick blender, then combine the couscous, chicken and canned creamed corn (or pureed frozen corn) – pureeing and adding cooking water from the corn as necessary to get the required texture.
