INGREDIENTS
1 Egg
8 medium sized prawns
1/2 a cup shredded coconut
1/4 of a cup of plain flour
1 tablespoon of vegetable oil
METHOD
1. Beat the egg up thoroughly with a fork in a small bowl.
2. Put the flour and shredded coconut in separate bowls.
3. Grab one prawn at a time and coat it with the flour, dip it in the egg mix and then coat it in the shredded coconut. Set aside on a plate and repeat the process until all the prawns are gone.
4. Heat up a medium sized non stick fry pan t. They will only takeo a medium to high heat.
5. Add in the oil then followed by the prawns. Cook until golden brown and flip to the other side and do the same again. They will only take 1 – 2 minutes per side.
6. Serve when cooled down
HANDY HINTS
Use bread crumbs if you don’t have shredded coconut!
