INGREDIENTS
150 grams (5 ounces) of white boneless fish fillet
¼ cup of baby spinach, washed well and drained
2 ½ tablespoons of unsalted butter
1/2 cup of freshly cooked rice
2 teaspoons of fresh orange juice
1 tablespoon of tomato sauce/ketchup
2 tablespoons of water

METHOD
1. In a small frying pan, melt ½ tablespoon of butter over medium/high heat add the fish and fry gently for 1 minute on each side.

2. Add the orange juice, tomato sauce/ketchup and water then cover the pan, lower the heat, and cook very gently for 6 minutes.

3. In another small frying pan, melt 1 tablespoon of the butter over medium heat, add the baby spinach and cook until it has wilted.

4. Turn off the heat, put the spinach onto a plate and chop it well, then return it to the pan.

5. Set heat to low, add the boiled rice and the remaining butter, and heat through.

6. Check the fish finally for bones, then combine the fish mixture with the spinach rice in a bowl and mix and mash everything well.
