INGREDIENTS
¼ cup of cooked brown rice
2 dried stone-free apricots, chopped or use canned apricots
2 tablespoons of apple juice
½ a small ripe banana, peeled and chopped
1 very small pinch of ground nutmeg

METHOD
1. Put the apricots into a medium bowl, cover them with water and leave for an hour to soak (Don’t worry about this step if using canned apricots).

2. Cook some brown rice by putting 1 cup of water into a small saucepan and bringing it to the boil over medium heat. Add a ½ cup of brown rice, reduce the heat to very low and cover with a lid.

3. Cook very gently for 18-20 minutes, or until the rice has absorbed the water and is soft – check frequently and add more water as necessary. Use ¼ cup of the cooked rice for this recipe.

4. Drain the water from the apricots and add all the other ingredients to the bowl.

5. Use a stick blender to blend everything to a smooth texture, adding more apple juice if necessary.
