INGREDIENTS
2 skinless chicken drumsticks
2 tablespoons of uncooked rice
5 stone-free dried apricots, chopped
1 heaped tablespoon of sultanas or raisins

METHOD
1. Put the chicken drumsticks into a small/medium-sized saucepan and add water to cover.

2. Bring to the boil over medium heat, reduce the heat to medium/low, and simmer the chicken for 10 minutes.

3. Stir in the rice, apricots and sultanas (or raisins) and bring back to a simmer, then reduce heat to low and simmer very gently for about 15 minutes, or until the rice is soft – checking often and adding more water if necessary to avoid drying out.

4. Turn off the heat and drain off excess water.

5. Remove the chicken to a plate and take out the bones and any hard cartilage, then put it back in the pan and use a stick blender, or place on a plate and chop/mash to the texture desired.
