INGREDIENTS
10 dried prunes, stone-free
1 tablespoon of dried sultanas
¾ cup of water
¼ cup of unsweetened pure orange juice (or freshly squeezed)

METHOD
1. Put the prunes and sultanas into a microwave-safe container.

2. Mix water and orange juice together in a small jug then pour enough over the dried fruits to only half cover them.

3. Cover with a lid that has a steam vent and microwave for about 30 seconds.

4. Remove from the microwave and stir, then return to the microwave and cook in 15-20 second bursts.

5. When the liquid begins to bubble and the prunes and sultanas look plump, end the cooking.

6. Cool the fruit in the liquid then chop the fruit very small and serve with the liquid, or puree everything using a stick blender.

HANDY HINTS
Add in a little grated cheese for some extra flavour!
