Pumpkin, Potato and Zucchini Soup

INGREDIENTS
1 tablespoon of olive oil
1 onion
2 cups pumpkin
2 cups zucchini
1 potato
2 cups salt reduced vegetable stock
Yoghurt or cream, to serve

METHOD
1. Remove skin from onion and dice into small pieces.

2. Remove skin and seeds from pumpkin the chop into small pieces.

3. Rinse zucchini and chop into small pieces.

4. Peel and chop potato into small pieces.

5. In a medium sized pot, add olive oil and heat.

6. Add in onion and cook for 3 -5 minutes until translucent.

7. Add to the pot the pumpkin, zucchini, potato and vegetable stock.

8. Cover the pot with a lid and simmer for 25 – 30 minutes until the vegetables are nice and tender.

9. Using a stick blender puree until smooth.

10. When serving add a spoonful of yogurt or cream.
