INGREDIENTS
4 medium sized carrots
1 tablespoon olive oil
1/2 teaspoon ground cumin

METHOD
1. Pre heat the oven to 200 degrees C.

2. Peel carrots and slice in half lengthways. If using large carrots slice in half again lengthways.

3. Place carrots onto a baking tray lined with baking paper. Drizzle olive oil over the top and sprinkle ground cumin on top as well.

4. Place into the oven and cook for 60 minutes until the carrot has cooked through.

5. When cooked remove carrots, put into a small bowl and puree using a stick blender or blend using a food processor.

HANDY HINTS
Roast off more carrots and make some yummy dip for yourself!
