INGREDIENTS
150 grams of fresh skinned, boneless salmon
1 teaspoon of olive oil
1 fresh tomato, diced
1 garlic clove, crushed
1 cup of water
1/2 a cup of broccoli
1/2 a cup of sweet potato, peeled and chopped into small pieces.
1/2 a cup of parsnip, peeled and chopped into small pieces.
1/2 a cup of pumpkin, peeled and chopped into small pieces.

METHOD
1. Using a small pot add sweet potato, broccoli, parsnip and pumpkin then add enough water to cover.

2. Bring to the boil and then reduce the heat to simmer for 8 – 10 minutes until cooked through.

3. Using a separate small pan, heat up the olive oil, garlic and diced tomato.

4. Add in the salmon fillet and cook evenly on both sides until pink inside.

5. Add salmon and sauce to the pot of cooked vegetables.

6. Mash through using a fork until mixed through.
